Cottage Cheese Banana Bread

 

This delicious and nutritious banana bread is made with ripe bananas and creamy cottage cheese for a moist, protein-rich treat. It’s a healthier twist on the classic, perfect for breakfast or as a snack!


Ingredients:

  • 2 ripe bananas, mashed
  • 3 large eggs
  • 1/2 cup cottage cheese (full-fat or low-fat)
  • 3 tablespoons maple syrup (adjust to taste)
  • 2 teaspoons vanilla extract
  • 2 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • Optional: 1/2 cup chopped walnuts, chocolate chips, or blueberries

Instructions:

  1. Preheat the Oven:
    • Set your oven to 350°F (175°C).
    • Line a loaf pan with parchment paper and lightly grease it.
  2. Prepare the Wet Ingredients:
    • In a large mixing bowl, whisk together the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until smooth.
  3. Incorporate the Dry Ingredients:
    • Add almond flour, baking soda, and cinnamon to the bowl.
    • Stir well until the mixture is fully combined.
  4. Add Mix-ins (Optional):
    • If using walnuts, chocolate chips, or blueberries, gently fold them into the batter.
  5. Fill the Loaf Pan:
    • Pour the batter evenly into the prepared loaf pan.
  6. Bake the Bread:
    • Place the pan in the oven and bake for around 50 minutes.
    • If the top starts browning too quickly, loosely cover it with foil after 30 minutes.
    • Check doneness by inserting a toothpick into the center—it should come out clean.
  7. Cool and Serve:
    • Let the bread cool in the pan for 10 minutes.
    • Transfer to a wire rack and allow it to cool completely before slicing.
