Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Ingredients:

  • 1 small bag fresh baby spinach
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 dash pepper
  • 1 dash herb and garlic seasoning
  • Salt to taste

Instructions:

  1. Preheat Oven – Set your oven to 375°F (190°C).
  2. Sauté the Mushrooms & Spinach – In a pan, heat olive oil over medium heat. Add the garlic and mushrooms, cooking until softened. Stir in the spinach and cook for another minute until wilted. Remove from heat.
  3. Prepare the Chicken – Season the chicken pieces with salt, pepper, herb, and garlic seasoning. Lightly sear them in the same pan for 3–4 minutes until they turn slightly golden.
  4. Assemble the Dish – In a greased baking dish, spread the spinach and mushroom mixture at the bottom. Layer the cooked chicken on top.
  5. Add Cheese & Cream – Pour the heavy cream evenly over the ingredients, then sprinkle Parmesan and mozzarella cheese on top.
  6. Bake – Place the dish in the oven and bake for 20–25 minutes, or until the cheese is melted and bubbly, and the chicken is fully cooked.
  7. Serve & Enjoy – Let it rest for a few minutes before serving. Enjoy your delicious, low-carb chicken, spinach, and mushroom dish!
