Ingredients:
- 1 small bag fresh baby spinach
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup sliced mushrooms
- 1 cup shredded mozzarella cheese
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 dash pepper
- 1 dash herb and garlic seasoning
- Salt to taste
Instructions:
- Preheat Oven – Set your oven to 375°F (190°C).
- Sauté the Mushrooms & Spinach – In a pan, heat olive oil over medium heat. Add the garlic and mushrooms, cooking until softened. Stir in the spinach and cook for another minute until wilted. Remove from heat.
- Prepare the Chicken – Season the chicken pieces with salt, pepper, herb, and garlic seasoning. Lightly sear them in the same pan for 3–4 minutes until they turn slightly golden.
- Assemble the Dish – In a greased baking dish, spread the spinach and mushroom mixture at the bottom. Layer the cooked chicken on top.
- Add Cheese & Cream – Pour the heavy cream evenly over the ingredients, then sprinkle Parmesan and mozzarella cheese on top.
- Bake – Place the dish in the oven and bake for 20–25 minutes, or until the cheese is melted and bubbly, and the chicken is fully cooked.
