Chicken Bubble Biscuit Bake Casserole

Ingredients

For the Filling:

  • 6–8 fresh peaches, peeled and sliced (or 4 cups canned peaches, drained)
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • 2 teaspoons lemon juice
  • 1 tablespoon cornstarch

For the Topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Peaches:

    • If using fresh peaches, peel and slice them into thin wedges.
    • If using canned peaches, drain them well.
  2. Make the Filling:

    • In a bowl, mix the peaches with granulated sugar, brown sugar, cinnamon, nutmeg (if using), lemon juice, and cornstarch.
    • Stir gently until the peaches are evenly coated.
    • Set the mixture aside to allow the flavors to blend.
  3. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
    • Grease a 9×9-inch baking dish with butter or non-stick spray.
  4. Assemble the Cobbler:

    • Pour the peach filling into the greased baking dish, spreading it evenly.
  5. Prepare the Topping:

    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • Add the melted butter, milk, and vanilla extract. Stir until just combined (do not overmix).
  6. Add the Topping:

    • Spoon the batter over the peach filling, spreading it lightly. It doesn’t need to cover the peaches completely, as it will spread while baking.
  7. Bake:

    • Place the dish in the oven and bake for 40–45 minutes, or until the topping is golden brown and a toothpick inserted in the center comes out clean.
  8. Serve:

    • Let the cobbler cool slightly before serving. It’s best enjoyed warm, with vanilla ice cream or whipped cream for extra flavor.
  9. Storage & Reheating:

    • Store leftovers in an airtight container at room temperature for up to two days.
    • To reheat, place in the oven for a few minutes until warmed through.

Enjoy your homemade peach cobbler!
