Cherry Pie Bars

These cherry pie bars capture all the flavors of a classic cherry pie in an easy-to-make, handheld treat! With a buttery crust, a sweet cherry filling, and a crumbly golden topping, they’re perfect for any occasion—whether it’s a holiday gathering, a potluck, or just a sweet craving.


Ingredients

For the Crust & Topping:
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • ½ teaspoon salt
For the Filling:
  • 1 (21 oz) can cherry pie filling
  • ½ teaspoon almond extract (optional, but enhances the cherry flavor!)
For the Glaze (Optional but Recommended!)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat & Prep the Pan
    • Preheat the oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish or line it with parchment paper.
  2. Make the Crust & Topping
    • In a large mixing bowl, beat the butter and sugar until light and fluffy.
    • Add eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
    • Gradually mix in the flour and salt until a soft dough forms.
  3. Assemble the Bars
    • Spread about two-thirds of the dough evenly into the prepared baking dish, pressing it down to form the crust.
    • Evenly spread the cherry pie filling over the crust.
    • Drop small pieces of the remaining dough over the cherry filling, creating a crumbly topping.
  4. Bake
    • Bake for 35–40 minutes, or until the top is lightly golden.
    • Let the bars cool completely before adding the glaze.
  5. Prepare the Glaze & Finish
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
    • Drizzle the glaze over the cooled bars.
    • Cut into squares and enjoy!
