Ingredients
For the Crust & Topping:
- 1 cup unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- ½ teaspoon salt
For the Filling:
- 1 (21 oz) can cherry pie filling
- ½ teaspoon almond extract (optional, but enhances the cherry flavor!)
For the Glaze (Optional but Recommended!)
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat & Prep the Pan
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish or line it with parchment paper.
- Make the Crust & Topping
- In a large mixing bowl, beat the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Gradually mix in the flour and salt until a soft dough forms.
- Assemble the Bars
- Spread about two-thirds of the dough evenly into the prepared baking dish, pressing it down to form the crust.
- Evenly spread the cherry pie filling over the crust.
- Drop small pieces of the remaining dough over the cherry filling, creating a crumbly topping.
- Bake
- Bake for 35–40 minutes, or until the top is lightly golden.
- Let the bars cool completely before adding the glaze.
- Prepare the Glaze & Finish
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled bars.
- Cut into squares and enjoy!
