Cajun Shrimp Scampi

 

Ingredients:

  • 12 raw shrimps (or more, depending on your preference)
  • 1 serving of pasta (preferably linguine)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon Cajun seasoning (adjust to taste)
  • Salt and pepper to taste
  • Juice of half a lemon
  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the pasta:
    Boil a pot of salted water and cook the linguine according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. Prepare the shrimp:
    Pat the shrimp dry and season them lightly with Cajun seasoning, salt, and pepper.
  3. Sauté the shrimp:
    In a large skillet over medium heat, melt the butter and olive oil together. Add the garlic and sauté for about 30 seconds until fragrant.
    Add the shrimp and cook for 2–3 minutes on each side or until pink and fully cooked. Remove the shrimp and set aside.
  4. Make the scampi sauce:
    In the same skillet, add a splash more butter or olive oil if needed. Add lemon juice and a few tablespoons of the reserved pasta water. Stir well to deglaze the pan and create a light sauce.
  5. Combine everything:
    Add the cooked pasta to the skillet and toss it well in the sauce. Return the shrimp to the pan and mix everything until well coated and heated through.
  6. Serve:
    Garnish with chopped parsley and grated Parmesan cheese if desired. Serve immediately.
