Ingredients:
- 1 large head of broccoli, cut into small florets
- 1 cup cheddar cheese, shredded
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup breadcrumbs
- 2 cloves garlic, finely minced
- 1/4 cup green onions, finely chopped
- Salt and black pepper, to taste
- Olive oil, for frying
Instructions:
- Steam the broccoli florets until soft, about 5–7 minutes. Once cooled slightly, chop them into small pieces.
- In a mixing bowl, combine the broccoli, cheddar cheese, eggs, flour, breadcrumbs, minced garlic, and green onions. Season with salt and pepper. Mix everything thoroughly until combined.
- Heat olive oil in a skillet over medium heat.
- Take about 2 tablespoons of the mixture and shape it into a small patty. Continue forming patties with the rest of the mixture.
- Fry the patties in the hot skillet for 3–4 minutes per side, or until golden and crispy. Transfer to a paper towel-lined plate to remove excess oil.
- Serve hot with your favorite dipping sauce or a side salad.
