Whenever I ask ‘what can I bring?’ these Apple Crisp Bites top the list! Sweet cinnamon-scented apples held in a buttery crispy oatmeal cup and crunchy sweet topping. So you could bake and take apple crisp to share easily with everyone.

Apple Crisp Bites Ingredients

  • all-purpose flour
  • rolled oats
  • Cinnamon nutmeg
  • Butter
  • Powdered sugar brown sugar
  • Apples
  • Apple pie filling (optional)
  • Caramel topping (optional)
  • Mini Muffin Pan 24

The cups of these apple crisp bites are made from buttery oatmeal cookie dough and baked to crispy perfection.
GOOD IDEA: I used a pestle (from mortar and pestle set) to press dough neatly to fit a mini tin muffin pan.
BUTTER: Some people have found the crust recipe to work perfectly while some others found the 12 tablespoons of butter was way too much. You may want to start by using 1 stick of butter or 8Tbsp.
You want a soft dough that sticks together slightly when you try to form a ball not a wet dough.
You can always add more or save the leftover butter for later.

How do you make Apple Filling?

This recipe is a mix of sliced apples brown sugar butter and spices that are cooked with some cornstarch on the stove to thicken everything up.
It takes just minutes to put together and can be stored in the fridge or freezer for later use.
Apple filling from scratch tastes SO much better than the canned version and can be used in everything from classic pies to danishes.
I know some people prefer making the apple filling without cornstarch but find it’s the easiest way to make it and you probably have everything already on hand.
Tips
Some apples are juicier than others. If you would like your filling thicker combine 1 tablespoon cornstarch with 1 tablespoon of water. Add a little at a time while the mixture is boiling until you reach desired consistency.
If by any chance you have lemon juice at hand place sliced apples in a large bowl and toss with lemon juice.

Ingredients

Oatmeal Cookie crust

  • 1 cups all-purpose flour
  • 1 cups rolled oats
  • 3/4 cups brown sugar
  • 12 Tablespoons butter softened

for the homemade Apple Filling Option

  • 2 Tablespoons butter
  • 3-4 medium apples peeled cored and diced in to 1/4-inch cubes
  • 1/3 cup brown sugar
  • 3 Tablespoons water
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 Tablespoon + 1 teaspoon cornstarch
  • 2 Tablespoons water

for the canned apple filling option

  • 1 can apple pie filling
  • Caramel topping optional

Instructions

  • Preheat oven to 350 degrees F. Grease 24-cup mini-muffin tin.
  • In a medium size pan melt butter add apples spices brown sugar and 3 Tablespoons water. Cook over medium-high heat for 4-6 minutes or until apples very slightly softened.
  • In a small dish combine cornstarch and 2 Tablespoons water. Add to pan while stirring and continue to cook until apples are tender and filling is thickened about 4-5 minutes. Cool.
  • Combine flour oats and brown sugar in a large bowl. Cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs.
  • Place a heaping tablespoon of the crust mixture into a mini muffin cup. Press along the bottom and sides to make a “cup”.There will be crust mixture left over.
  • Place about 1 tablespoon of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
  • Bake in the preheated oven until golden brown 15 to 20 minutes. Cool in the pan for 10 minutes. Use a knife to loosen from pan and they should pop right out.
  • Drizzle with caramel topping if desired
