Ingredients:
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ cup applesauce
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ½ cup raisins (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or round baking pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and applesauce.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chopped nuts and raisins if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve as is, or dust with powdered sugar or top with a simple glaze for extra sweetness.
