Amish Applesauce Cake

 

Ingredients:

  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup applesauce
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or round baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and applesauce.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chopped nuts and raisins if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve as is, or dust with powdered sugar or top with a simple glaze for extra sweetness.
