Zucchini Patties Recipe

Zucchini patties are a simple and delicious way to enjoy fresh zucchini. Ingredients

Makes about 8-10 patties

2 cups grated zucchini (approximately 2 medium zucchinis)

2 large eggs, beaten

¼ cup chopped onion

½ cup all-purpose flour

½ cup grated Parmesan cheese

¼ teaspoon garlic powder (optional, for added flavor)

Salt and pepper to taste

3-4 tablespoons vegetable oil (for frying)


Instructions

1. Prepare the Zucchini:
Start by grating the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial for ensuring the patties hold together and don’t become soggy.

2. Mix the Ingredients:
In a large mixing bowl, combine the grated zucchini, beaten eggs, and chopped onion. Stir until evenly combined. Add the flour, Parmesan cheese, garlic powder (if using), salt, and pepper. Mix thoroughly until the mixture forms a cohesive batter.

3. Shape the Patties:
Using your hands or a spoon, form the mixture into small patties, about 2-3 inches in diameter. If the mixture is too wet, you can add a little more flour, one tablespoon at a time.

4. Heat the Oil:
Heat the vegetable oil in a large skillet over medium heat. To test if the oil is ready, drop a small piece of batter into the skillet—if it sizzles, the oil is hot enough.

5. Cook the Patties:
Place the patties in the skillet, leaving enough space between each one for easy flipping. Cook for 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to carefully flip them to avoid breaking.

6. Drain Excess Oil:
Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
