Garlic Chicken & Veggie Stir-Fry with Creamy Rice

 

A quick, satisfying weeknight dinner loaded with flavor and balanced with creamy rice on the side.

🛒 Ingredients:

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup broccoli florets
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt & black pepper (to taste)
  • 2 cups cooked rice (white or brown)
  • ¼ cup cream or half & half
  • 1 tbsp butter (optional, for extra creaminess)

🍳 Instructions:

1. Cook the Chicken:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Sauté for about 6–8 minutes until the chicken is golden and cooked through.

2. Add the Vegetables:

  • Stir in the chopped zucchini, bell peppers, broccoli, and onion.
  • Cook for another 6–8 minutes, stirring occasionally, until the veggies are tender but still crisp.

3. Make It Juicy:

  • If the pan gets dry, pour in a splash of water or chicken broth.
  • Stir everything together and cook for an additional 2–3 minutes to combine flavors.

4. Prepare the Creamy Rice:

  • While the stir-fry cooks, heat your cooked rice.
  • Stir in the cream and butter (if using) until creamy and well mixed.

5. Serve & Enjoy:

  • Spoon the creamy rice onto plates and top or serve alongside the chicken veggie stir-fry.
  • Enjoy a wholesome, delicious meal ready in 30 minutes!
