Cowboy Casserole

 

A hearty, comforting casserole loaded with seasoned beef, creamy sauce, crispy tater tots, and melted cheese—pure comfort food!

Ingredients

  • ½ lb ground beef
  • 1 cup corn kernels (canned or frozen)
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • ½ small onion, diced
  • 1 cup shredded cheddar cheese (divided)
  • Salt and pepper to taste
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)
  • 2 cups frozen tater tots

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the beef: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess fat.
  3. Mix the filling: In a large bowl, combine the cooked beef mixture with corn, cream of mushroom soup, sour cream, garlic powder, paprika, salt, pepper, and ½ cup of shredded cheddar cheese. Stir well.
  4. Assemble the casserole: Spread the beef mixture evenly in a greased 8×8 or 9×9 inch baking dish. Top with a layer of frozen tater tots.
  5. Bake: Place in the oven and bake for 25–30 minutes, or until the tater tots are golden brown and crispy.
  6. Add cheese: Sprinkle the remaining ½ cup of cheddar cheese over the top. Return to the oven and bake for another 5–10 minutes, until the cheese is melted and bubbly.
  7. Serve: Let it cool for a few minutes before serving. Enjoy your Cowboy Casserole hot and fresh!
