Ingredients
- ½ lb ground beef
- 1 cup corn kernels (canned or frozen)
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- ½ small onion, diced
- 1 cup shredded cheddar cheese (divided)
- Salt and pepper to taste
- ½ tsp garlic powder
- ½ tsp paprika (optional)
- 2 cups frozen tater tots
Instructions
- Preheat oven to 375°F (190°C).
- Cook the beef: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess fat.
- Mix the filling: In a large bowl, combine the cooked beef mixture with corn, cream of mushroom soup, sour cream, garlic powder, paprika, salt, pepper, and ½ cup of shredded cheddar cheese. Stir well.
- Assemble the casserole: Spread the beef mixture evenly in a greased 8×8 or 9×9 inch baking dish. Top with a layer of frozen tater tots.
- Bake: Place in the oven and bake for 25–30 minutes, or until the tater tots are golden brown and crispy.
- Add cheese: Sprinkle the remaining ½ cup of cheddar cheese over the top. Return to the oven and bake for another 5–10 minutes, until the cheese is melted and bubbly.
