Easy Veggie Patties: A Quick and Delicious Meatless Meal

Ingredients:

  • 1 zucchini, grated
  • 2 carrots, grated
  • ½ cup broccoli, grated
  • ⅓ cup flour
  • 3 eggs
  • ½ teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the vegetables:
    Grate the zucchini, carrots, and broccoli. If the zucchini has a lot of moisture, squeeze out the excess liquid using a clean kitchen towel.
  2. Mix the batter:
    In a large bowl, combine the grated vegetables. Add the flour, eggs, Cajun seasoning, salt, and pepper. Mix well until everything is combined into a thick batter.
  3. Heat the oil:
    In a large non-stick skillet, heat olive oil over medium heat.
  4. Cook the patties:
    Scoop about 2 tablespoons of the mixture and shape it into a small patty. Place it in the hot skillet. Cook each patty for about 3–4 minutes on each side or until golden brown and cooked through.
  5. Drain and serve:
    Remove the patties from the skillet and place them on a paper towel to drain excess oil. Serve warm with your favorite dipping sauce, salad, or inside a sandwich.
