Ingredients:
- 1 zucchini, grated
- 2 carrots, grated
- ½ cup broccoli, grated
- ⅓ cup flour
- 3 eggs
- ½ teaspoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions:
- Prepare the vegetables:
Grate the zucchini, carrots, and broccoli. If the zucchini has a lot of moisture, squeeze out the excess liquid using a clean kitchen towel. - Mix the batter:
In a large bowl, combine the grated vegetables. Add the flour, eggs, Cajun seasoning, salt, and pepper. Mix well until everything is combined into a thick batter. - Heat the oil:
In a large non-stick skillet, heat olive oil over medium heat. - Cook the patties:
Scoop about 2 tablespoons of the mixture and shape it into a small patty. Place it in the hot skillet. Cook each patty for about 3–4 minutes on each side or until golden brown and cooked through. - Drain and serve:
Remove the patties from the skillet and place them on a paper towel to drain excess oil. Serve warm with your favorite dipping sauce, salad, or inside a sandwich.
