Ingredients:
- Fish (cleaned, scales removed, and sliced – such as salmon, cod, tilapia, or sea bass)
- 2–3 tablespoons oil
- 3–4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2–3 stalks green onions, chopped
- 2–3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sugar
- 1 cup water or chicken stock
- Salt and pepper to taste
Instructions:
- Prepare the Fish:
Pat the cleaned and sliced fish dry with a paper towel. Lightly season with salt and pepper. - Heat the Oil:
In a pan or wok, heat the oil over medium heat. Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. - Add the Fish:
Gently place the fish slices into the pan. Sear each side for 1–2 minutes until lightly browned. Be careful not to break the fish. - Add Sauces and Seasoning:
Pour in the soy sauce, oyster sauce (if using), and sugar. Stir gently to coat the fish evenly. - Simmer:
Add the water or chicken stock. Bring to a gentle boil, then reduce the heat to low. Cover and let the fish simmer for about 8–10 minutes, or until fully cooked and flavorful. - Finish with Green Onions:
Add chopped green onions during the last minute of cooking for freshness and aroma. - Serve:
Carefully transfer the braised fish to a serving plate. Spoon some of the sauce over the top. Serve hot with steamed rice.
