Taco Casserole Recipe

 

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup chopped onion
  • ¼ cup chopped green bell pepper
  • ¼ cup sliced black olives
  • ¼ cup chopped fresh cilantro
  • ½ head iceberg lettuce, shredded
  • Tortilla chips, for serving

Instructions:

  1. Cook the Beef:
    In a large skillet over medium heat, cook the ground beef until browned. Drain any extra fat.
  2. Season the Beef:
    Stir in the taco seasoning, mixing well to coat the meat evenly.
  3. Combine the Filling:
    In a large bowl, mix together the seasoned beef, black beans, corn, diced tomatoes with green chilies, and half of the shredded cheese.
  4. Assemble the Casserole:
    Spread half of the beef mixture into a 9×13 inch baking dish. Add an even layer of sour cream on top, then cover with the remaining beef mixture.
  5. Add Toppings:
    Sprinkle the rest of the shredded cheese over the top, followed by chopped onion, green bell pepper, black olives, and cilantro.
  6. Bake:
    Place in a preheated oven at 350°F (175°C) and bake for 25–30 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    Allow the casserole to cool slightly. Top with shredded lettuce and serve with crunchy tortilla chips on the side.
