Creamy Garlic Mushroom Salmon

 

Ingredients:

  • 4 salmon fillets
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream

Instructions:

  1. Season the salmon:
    Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.
  2. Sear the salmon:
    Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down (if they have skin), and cook for 4–5 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. Sauté the garlic and mushrooms:
    In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 3–4 minutes, or until the mushrooms are tender and lightly browned.
  4. Make the creamy sauce:
    Lower the heat to medium. Pour in the heavy cream and stir well to combine with the garlic and mushrooms. Let it simmer gently for 2–3 minutes, allowing the sauce to thicken slightly.
  5. Return the salmon:
    Add the cooked salmon fillets back into the skillet. Spoon some of the sauce over the top of each fillet. Let them simmer in the sauce for another 2–3 minutes to absorb the flavors.
  6. Serve:
    Serve hot, garnished with fresh parsley if desired. This dish pairs beautifully with mashed potatoes, rice, or steamed vegetables.
