Ingredients:
- 4 large potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 eggs
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Grate the potatoes using a grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess liquid.
- In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and pepper. Stir well to form a uniform mixture.
- Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
- Scoop spoonfuls of the potato mixture into the hot oil, flattening them into round pancakes. Cook for about 3–4 minutes per side or until golden brown and crispy.
- Once done, transfer the pancakes to a plate lined with paper towels to remove excess oil.
- Repeat the process until all the batter is used.
- Serve hot with applesauce, sour cream, or your favorite toppings.
