Chicken with French Onion Flavor Baked in a Bubbly Casserole

 

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs, if preferred)
  • 1 packet French onion soup mix
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.

  2. Prepare the Chicken:
    Place the chicken breasts in the prepared baking dish. Season lightly with black pepper and garlic powder.

  3. Make the Creamy Topping:
    In a mixing bowl, combine the sour cream, mayonnaise, French onion soup mix, and shredded cheddar cheese. Stir well until fully blended.

  4. Assemble the Casserole:
    Spread the creamy mixture evenly over the chicken breasts, covering them completely.

  5. Add the Crunchy Topping:
    In a separate bowl, mix the crushed Ritz crackers (or breadcrumbs) with grated Parmesan cheese and melted butter. Sprinkle this mixture over the top of the casserole.

  6. Bake:
    Place the dish in the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and the top is golden brown and bubbly. If using chicken thighs, cooking time may be slightly longer.

  7. Garnish and Serve:
    Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired. Serve hot with rice, mashed potatoes, or a fresh salad.
