Ingredients
1 small bag of fresh baby spinach
A pinch of black pepper
A pinch of herb and garlic seasoning
8 oz shredded mozzarella cheese
6 thinly sliced chicken breasts
1 container green onion cream cheese
1/4 cup olive oil
1/2 cup chicken broth
1 large package of sliced mushrooms
Instructions
1. Preheat your oven to 375°F (190°C). Arrange the chicken breasts in a single layer in a 9×13-inch baking dish. Spread the baby spinach and sliced mushrooms evenly over the chicken. Sprinkle with black pepper and herb and garlic seasoning.
2. In a bowl, soften the green onion cream cheese and mix it with olive oil and chicken broth until the mixture is smooth. Pour this over the chicken, spinach, and mushrooms. Cover the dish loosely with foil, leaving it unsealed to allow steam to escape.
3. Bake for 20 minutes. Remove the foil and continue baking uncovered for another 20-25 minutes.
4. Sprinkle the shredded mozzarella cheese on top and bake for an additional 10 minutes, or until the cheese is melted and golden brown.
