Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- ½ cup chopped onion
- ¼ cup chopped green bell pepper
- ¼ cup sliced black olives
- ¼ cup chopped fresh cilantro
- ½ head iceberg lettuce, shredded
- Tortilla chips, for serving
Instructions:
- Cook the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain any extra fat. - Season the Beef:
Stir in the taco seasoning, mixing well to coat the meat evenly. - Combine the Filling:
In a large bowl, mix together the seasoned beef, black beans, corn, diced tomatoes with green chilies, and half of the shredded cheese. - Assemble the Casserole:
Spread half of the beef mixture into a 9×13 inch baking dish. Add an even layer of sour cream on top, then cover with the remaining beef mixture. - Add Toppings:
Sprinkle the rest of the shredded cheese over the top, followed by chopped onion, green bell pepper, black olives, and cilantro. - Bake:
Place in a preheated oven at 350°F (175°C) and bake for 25–30 minutes, or until the cheese is melted and bubbly. - Serve:
Allow the casserole to cool slightly. Top with shredded lettuce and serve with crunchy tortilla chips on the side.
